- Maize Flour (Cornmeal): 2 cups
- Water: 4 cups
Steps
1. Boil Water
- Heat Water: Pour 4 cups of water into the pot and bring it to a boil over medium-high heat. If you’re using salt, add it to the water at this stage.
2. Add Maize Flour
- Flour: Gradually add 2 cups of maize flour to the boiling water. It’s best to sprinkle the flour slowly while stirring continuously to avoid lumps.
3. Stir and Cook
- Stir: Use a wooden spoon or spatula to stir the mixture thoroughly. Ensure that the flour is evenly mixed into the water.
- Cook: Lower the heat to medium-low and cover the pot. Let the ugali cook for about 10-15 minutes. You might need to stir occasionally to ensure it doesn’t stick to the bottom of the pot.
4. Check Consistency
- Check Consistency: The ugali is done when it has a thick, dough-like consistency and pulls away from the sides of the pot as you stir. It should be firm but not dry.
5. Serve
- Serve: Turn off the heat and let the ugali sit for a few minutes before serving. You can use the wooden spoon to shape it into a smooth, flat surface if desired.
